There’s no doubt in my mind that the person who first put oil and vinegar together for a dressing on fresh greens was a genius. How did they come up with the idea of combining two ingredients that do not readily work together to form the basis of today’s salad dressing? An then when they added fresh herbs for flavor – well, that nothing short of culinary genius.
You may not be a genius in the kitchen (I’m certainly not!) but it’s easy to take simple ingredients, shake them together in a bottle and serve with salad greens. Here’s a “shake-it-quick” dressing that takes about 5 minutes to make and turns your ordinary green or mixed salad into a palate pleaser.

How to Make It
- In a screw-top jar, combine all ingredients.
- Attach cover and shake to mix well.
- Chill.
- Shake again before serving. Makes ½ cup.
Notes
- Ingredient Notes: Olive oil is traditional in salad dressings, dating back to the early Romans. Today’s vegetable oil or canola oil will work but won’t have as much flavor. Only use household white vinegar as a last resort. Your best bets for flavor are cider vinegar, wine vinegar, or balsamic vinegar. Don’t feel you need to stick to the herbs I have above. Get creative. Add flavors that appeal to you.
