Ingredient Note: This recipe originated in the early 20th century before Craisins (a dried raisin-like cranberry) were developed. If you can find these in your store, try them instead.
Orange Cranberry Bread

1 Cup fresh or dried cranberries
1 Cup walnuts, coarsely chopped
Grated rind from 1 orange
1 Cup granulated sugar
1 large egg
3/4 Cup orange juice
2 Tbl butter, softened
2 Cup all-purpose flour
1/2 Tbl baking soda
1/2 Tbl baking powder
1 Tsp salt
How to Make It
- Cut fresh cranberries in half. Coarsely chop walnuts. Grate rind from orange and combine with walnuts and cranberries. Set aside. Preheat oven to 350F.
- In a mixing bowl, combine sugar, egg, orange juice, and butter. Beat until creamy.
- Add in flour, baking soda, baking powder, and salt. Mix well. Fold in cranberry-walnut mix. Pour batter into a greased loaf pan and bake for 1 hour.
